This delicious and healthy chicken salad is perfect for a quick and easy lunch. The gluten free and dairy free ingredients make it perfect for women with PCOS, but everyone will love this flavorful salad. With plenty of protein and nutrients, this salad will help you power through your day.

Eating a healthy diet rich in lean protein and fresh vegetables is so beneficial for PCOS hormone health. In particular, grilled chicken and a nutrient-packed salad is a good option for women with PCOS. The chicken provides protein and iron, which can help to regulate hormones, while the vegetables are rich in vitamins and minerals that support overall health. Additionally, this meal is low in sugar and simple carbohydrates, which can help to control blood sugar levels. Overall, grilled chicken and a nutrient-packed salad is a healthy option for women with PCOS.

Best Grilled Chicken

While you can definitely cook or grill your own chicken breast I frequently buy already prepared chicken to add to my salads. 

 A rotisserie chicken is my favorite but it does take a little work to finish preparing when I get home from the grocery store. 

My other favorite is Costco’s chicken skewers. Then I can just microwave one or two and viola I have delicious chicken for my salad. These also freeze amazingly allowing me to stock up and have them easily available. 

 Butcher box, Trader Joes, as well as countless other grocery stores also carry grilled chicken and they can both be kept frozen until ready to heat up and use. Ideally choose organic, hormone free chicken.

 Note, if you are using frozen chicken and meal prepping your lunches I heat up the chicken I need for the next day the night before then store in the fridge with my salad container so that I don’t have any excuse to not pack my lunch the next day. 

How to store and serve 

This salad stores for up to 4 days in the refrigerator making it an amazing meal prep lunch for a busy week. 

For best results store the wet ingredients separately or at the bottom of your container. Then Layer the cucumbers peppers and lettuce on top. Store dressing in a separate container and add just before eating.

Ingredients

  • 2 cups Mixed greens or romaine lettuce
  • ½ cup Tomatoes diced or cherry tomatoes halved
  • ½ cup Cucumber chopped
  • ¼ cup Kalamata olives
  • ¼ cup Kidney
  • ¼ cup Garbanzo beans
  • ½ of a Bell Peppers diced
  • ¼ cup Marinated artichoke chopped make sure they are sugar free
  • Grilled chicken sliced

Mediterranean Vinaigrette Dressing

  • 1 tbsp Olive Oil
  • 2 tbsp Apple Cider Vinegar
  • 1/3 Lemon Juice
  • Garlic Powder
  • Dried Oregano
  • Salt
  • Pepper

Instructions

  • To make dressing, add all ingredients to a jar with a lid and shake. Season to taste with garlic powder dried oregano, salt and pepper
  • Layer all ingredients on plate or individual salad bowl and drizzle with dressing before topping with sliced grilled chicken

  • 7 Tablespoons olive oil Plus some for cooking
  • 1/2 Cups Freshly squeezed lime juice
  • 1 Tablespoon Lime Zest
  • 2 Tablespoons Cilantro Chpped Extra cilantro leaves to garnish
  • 2 cloves garlic diced
  • 1/8 cup Honey
  • 1 Teaspoon Red chili flakes
  • 1 Teaspoon Cumin, ground
  • 1 Teaspoon Salt
Ensalada
  • 4 Chicken breasts trimmed and cleaned
  • 2 Red orange or yellow bell peppers sliced
  • 1 Red onion, sliced
  • 8 Cups Mixed greens washed and dried
  • 2 Avocados, sliced
  • 2 Cups Cherry tomatoes halved

Instructions
  1. Add all dressing ingredients to a jar with lid, cap and shake well until completely combined! Pour half of the dressing into a gallon zip lock bag to use as a marinade for the chicken. Set the other half aside to use as the dressing so that it doesn’t become contaminated by raw chicken Place cleaned chicken breast in the ziplock back and refrigerate for at least 1 hour before grilling. To grill chicken heat grilling pan (or skillet) over med-high heat. Depending on the type of pan/grill you may want to drizzle a little extra olive oil in the pan. Place the marinated chicken in the pan and cook for approximately 3 min per side until lightly browned and cooked through. Set aside to cool In the same pan sauté the onions and peppers in a light drizzle of olive oil. You can also drizzle a little marinade over them to make sure they get a little extra flavor as well! Chop chicken into chunks and assemble the ingredients in a bowl to enjoy your chicken fajita ensalada! If you are making a big batch to eat over the week I place my chopped chicken in one container, lettuce washed and thoroughly dried in a bag and sautéed pepper and onion mix in a third container. I leave the dressing in the jar so I can shake before use and then I add half an avocado and some cilantro when I go to assemble my salad.

This amazing and easy salad it a favorite in our house! Although I typically recommend going dairy free with PCOS I do occasionally make exceptions. Mozzarella is a high-fat cheese and probably a better choice than some dairy options. But you will see I don't overload my salad with it. Just a few pieces as a splurge and it's so worth it!

  • 1/3 Cups Balsamic Vinegar
  • 1/2 Cup olive oil
  • Salt and pepper to taste
